Suman Mokhtarian, 33, was found with gunshot wounds at 6pm on Wednesday in Riverstone and died at the scene.
Shortly after, a red Audi and a white van were found alight at two nearby locations in Sydney's north-west.
Police are investigating whether the attack was gangland related.
A manhunt is underway as police have confirmed two cars found engulfed in flames are linked to a "targeted" fatal shooting in Sydney's north-west.

A short time later, firefighters were called to Riverstone Road and found a red Audi set alight.
Police then located a white van ablaze on nearby Matthias Street. Both vehicles were destroyed in the fires and three crime scenes were established.
Mr Mokhtarian was a mixed martial arts trainer and fighter and previously fought in the UFC.
Police sources said he survived an attempt on his life last February, when a gunman fired on him outside a gym in Wentworthville.
Superintendent Jason Joyce told ABC Radio Sydney on Thursday the vehicles were involved in the shooting.
Superintendent Joyce said he was unable to confirm whether the shooting was gangland related but said police were exploring "a number of lines of inquiry".

"What I can say is that it was a targeted attack … there were some people who witnessed the incident," he said.
"My heart goes out to not only the family of the victim, but also the people who had to witness it."

Footage from the crime scene on Wednesday afternoon showed police cordoning off a residential street.
Officers were seen collecting evidence and taking photos of what appeared to be bullet casings.

She said it was "scary" and the incident made her want to move house.
"I was out the front with my little kids, [aged] one and three, and we heard the gunshots and then the person drove past our house," she said.
"I called the police straight away, [ran] over and checked to see if he was alive, he clearly wasn't.

Ms Hopwood had placed flowers on Thursday morning at a nearby pole, which had bullets shot into it.
"I could immediately tell he wasn't alive, otherwise I would've tried to help him," she said.

Another witness who lived in the area, Milton, said he heard the bullets being fired.
"Bang, bang, bang … people were worried … burning cars, everything," he said.
